A rich and creamy Russian dish with tender beef, mushrooms, and a savory sauce served over egg noodles or rice.

Ingredients:

  • 500g beef sirloin, thinly sliced
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 200g mushrooms, sliced
  • 1 tbsp flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • Salt and pepper to taste
  • 1/2 tsp smoked paprika
  • Fresh parsley, chopped (for garnish)
  • Cooked egg noodles or rice

Instructions:

  1. Prepare the Beef:
    • Slice the beef thinly against the grain for tenderness.
    • Season with salt, pepper, and smoked paprika.
  2. Cook the Beef:
    • Heat olive oil in a large pan over medium-high heat.
    • Add the beef and sear for 2 minutes per side. Remove and set aside.
  3. Sauté the Vegetables:
    • In the same pan, add butter and let it melt.
    • Sauté onions until soft, then add garlic and mushrooms. Cook until mushrooms are golden brown.
  4. Make the Sauce:
    • Sprinkle flour over the mushroom mixture and stir for 1 minute.
    • Slowly add beef broth while stirring to avoid lumps.
    • Mix in Worcestershire sauce, Dijon mustard, and sour cream. Stir well.
  5. Combine:
    • Return the beef to the pan and simmer for 5 minutes until the sauce thickens.
  6. Serve:
    • Serve over egg noodles or rice, garnished with fresh parsley.

Tips:

  • Use high-quality beef for the best texture.
  • Adjust the thickness of the sauce with more broth if needed.
