  • ½ cup (1 stick) unsalted butter
  • 4 oz dark chocolate (60–70% cocoa)
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup granulated sugar
  • 1 tsp vanilla extract
  • ¼ cup all-purpose flour
  • ½ tsp salt
  • Butter and cocoa powder (for greasing ramekins)
  • Powdered sugar (for garnish)
  • Vanilla ice cream or whipped cream (optional)

Instructions

Step 1: Preparing the Ramekins

  1. Preheat oven to 425°F (220°C).
  2. Grease four 6-ounce ramekins with butter and dust with cocoa powder. This prevents sticking.

Step 2: Melting the Chocolate and Butter

  1. In a heatproof bowl, melt the butter and chocolate over a double boiler or in the microwave (in 30-second intervals).
  2. Stir until smooth and let cool slightly.

Step 3: Making the Batter

  1. In another bowl, whisk eggs, egg yolks, sugar, and vanilla until light and fluffy.
  2. Gradually add melted chocolate, stirring constantly.
  3. Sift in flour and salt, folding gently until combined.

Step 4: Baking the Lava Cakes

  1. Divide the batter evenly among the prepared ramekins.
  2. Bake for 10–12 minutes, until the edges are firm but the center is still soft.
  3. Let the cakes rest for 1 minute before inverting onto plates.

Step 5: Serving

  1. Dust with powdered sugar.
  2. Serve warm with vanilla ice cream or whipped cream.
