- 2 lbs snake meat (rattlesnake or python)
- 3 tbsp olive oil
- 4 cloves garlic (minced)
- 2 tbsp unsalted butter
- 1 tsp smoked paprika
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp cayenne pepper (optional)
- 1 tsp dried oregano
- 1 tsp dried thyme
- 2 tbsp fresh parsley (chopped)
- 1 lemon (juiced)
- 2 tbsp honey
- 1 tbsp soy sauce
- 2 tbsp Dijon mustard
- Metal or wooden skewers (if using wooden skewers, soak them in water for 30 minutes)
Instructions
Step 1: Preparing the Snake Meat
- If using a whole snake, skin and clean it properly. Remove the entrails, then cut it into 4–5-inch sections.
- Rinse the snake meat under cold water and pat it dry with paper towels.
- In a bowl, mix olive oil, lemon juice, soy sauce, honey, mustard, salt, black pepper, paprika, oregano, and thyme.
Step 2: Marinating
- Place the snake meat in the marinade and ensure it is fully coated.
- Cover and refrigerate for at least 2 hours (preferably overnight for maximum flavor).
Step 3: Preparing the Grill
- Preheat the grill to medium-high heat.
- Lightly oil the grates to prevent sticking.
Step 4: Grilling the Snake
- Skewer the meat pieces, or place them directly on the grill.
- Grill for 8–12 minutes, flipping occasionally, until the meat is opaque and firm.
Step 5: Making the Garlic Butter Sauce
- In a small pan, melt the butter over low heat.
- Add the minced garlic and sauté until fragrant.
