Ingredients

  • 2 lbs snake meat (rattlesnake or python)
  • 3 tbsp olive oil
  • 4 cloves garlic (minced)
  • 2 tbsp unsalted butter
  • 1 tsp smoked paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp cayenne pepper (optional)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 2 tbsp fresh parsley (chopped)
  • 1 lemon (juiced)
  • 2 tbsp honey
  • 1 tbsp soy sauce
  • 2 tbsp Dijon mustard
  • Metal or wooden skewers (if using wooden skewers, soak them in water for 30 minutes)

Instructions

Step 1: Preparing the Snake Meat

  1. If using a whole snake, skin and clean it properly. Remove the entrails, then cut it into 4–5-inch sections.
  2. Rinse the snake meat under cold water and pat it dry with paper towels.
  3. In a bowl, mix olive oil, lemon juice, soy sauce, honey, mustard, salt, black pepper, paprika, oregano, and thyme.

Step 2: Marinating

  1. Place the snake meat in the marinade and ensure it is fully coated.
  2. Cover and refrigerate for at least 2 hours (preferably overnight for maximum flavor).

Step 3: Preparing the Grill

  1. Preheat the grill to medium-high heat.
  2. Lightly oil the grates to prevent sticking.

Step 4: Grilling the Snake

  1. Skewer the meat pieces, or place them directly on the grill.
  2. Grill for 8–12 minutes, flipping occasionally, until the meat is opaque and firm.
